About Khaman
Khaman also called khaman Dhokla is prepared either with ground channa dal or gram flour (besan) mixed with water to make a thick paste/batter after that it is baked in a cooker or a microwave to get a spongy cake-like texture. The ingredients used to bake khaman are Gram flour, suji, lemon juice, water, and curd. Whereas, to enhance its taste Khaman is garnished with the tadka made up of green chilies, curry leaves, spices, and sesame seeds (til beej).
Khaman Dhokla is soft and spongy without being hard and easily broken. It is a quick recipe that does not require any soaking, grinding or fermenting rice. It can be eaten either in breakfast or as an evening snack with green chutney or red garlic chutney to taste awesome.
Khaman Dhokla is prepared in 3 parts- ready the paste/batter, bake or steam the batter, and lastly garnish the khaman.
About Dhokla
Dhokla is made up of fermented/soaked rice batter/ rice paste, or chana dal, suji, or gram flour. It looks yellow or white in color and is a little hard as compared to khaman which is soft and spongy. It is mostly served with Dahi, green chutney, and red garlic chutney.
Dhokla is garnished with a tadka made of mustard seeds, coriander leaves, spices, and green chilies. It can be eaten either for breakfast or as an evening snack.
Dhokla prepares in three parts- Firstly soak rice or chana dal, after that make a batter/paste of it, then bake or steam the paste and lastly garnish it with spices and coriander leaves.


Recipe for khaman dhokla

Ingredients ➢
- 1/1/2 cup Besan (gram flour)
- water
- ½ tablespoon Turmeric
- ½ tablespoon sugar
- Salt to taste
- ½ tablespoon Eno
Garnishing ➢
- 2 tablespoon sugar
- ½ spoon lemon juice
- 4-5 chopped coriander leaves
- Salt to taste
- ½ cup water
- 4-5 curry leaves
- 4-5 green chilies
- ½ tablespoon mustard seeds
- 1 tablespoon oil
How to make khaman dhokla ➢
1. To make batter take a bowl in that add ½ cup gram flour, salt to taste, ½ tablespoon sugar, ½ tablespoon turmeric powder. Now mix everything well after that add water and whisk it again to get a creamy flowing consistency that should not be very thin or thick when it gets ready keep it aside for 10 minutes.
2. Now all around the tin/plate in which you will bake dhokla grease some oil.
3. Come back to the batter and add ½ tablespoon, Eno, in it before adding it to the greased plate mix it well.
4. Now add batter to the plate immediately spread it well all over and then place the tin in a steamer for about 20 minutes over medium flame.
5. After 20 minutes with the help of a knife check whether the dhokla baked properly or not. If not extend the time for 2-3 minutes.
6. When the batter is cooked properly keep it aside for cooling.
7. Now cut the batter properly with the help of a knife and divide it into small square parts.
Garnishing ➢
1. Now take a pan in which put one tablespoon oil and also add ½ tablespoon mustard seeds. Let it splutter.
2. When you will hear a bursting, sound adds 4-5 green chilies, add a few curry leaves mix it well, then add ½ cup water, ½ tablespoon salt, 2 tablespoon sugar, mix everything well when the water begins to boil turn off the flame.
3. Add a few chopped coriander leaves on that and ½ tablespoon lemon.
4. Pour the garnishing ingredients onto the dhokla you can also add grated coconut and coriander leaves to the dhokla.
5. Khaman Dhokla is ready to serve.
