Ingredients for Mutton Curry

For Marination ➣

  • 800 grams mutton pieces
  • 2 tablespoons ginger garlic paste
  • 1 cup curd
  • 2-3 green chilies
  • 1 tablespoon red chili powder
  • ½ tablespoon asafetida (heng)
  • 1 tablespoon cumin powder
  • 2 tablespoons coriander powder
  • Salt to taste
  • 1 tablespoon ghee
  • Few coriander leaves

For Masala ➣

  • 4 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 5 black cardamom
  • 2 tablespoons black pepper
  • 4 cloves
  • 5 green cardamon
  • 1 ½ inch cinnamon stick
  • ½ tablespoon salt
  • 2 tablespoons ghee
  • Few coriander leaves

For gravy ➣

  • 2 tablespoons ghee
  • 4-5 tablespoons oil
  • 1 black cardamom (Ilayechee)
  • 4-5 black pepper (Kali Mirch)
  • 2-3 cloves (laung)
  • 1 bay leave (tej patta)
  • 1-inch cinnamon (dalchini)
  • 5-6 sliced onion
  • Salt to taste
  • Water
  • 1 tablespoon prepared masala

How to make Mutton Curry at home 

For Marination ➣

  1. In a large bowl add mutton, 2 tablespoons ginger-garlic paste, 1 cup curd, 2-3 green chilies, 1 tablespoon red chili powder, ½ tablespoon heng, 1 tablespoon cumin powder, 2 tablespoon coriander powder, salt to taste, 1 tablespoon ghee, few coriander leaves, mix it well so that mutton is mixed with masalas.Refrigerate and keep for at least 2 hours overnight to make mutton soft. Don’t use tomatoes or lemon for the marination process as it can make the meat tough you can use it later if you want.

    Also, don’t marinate at room temperature as it can develop bacteria. Refrigerate is best for marination.

  2. Keep out the marinate chicken 30 minutes before going further for cooking.


For Masala ➣

  1. Take pan in that add salt, coriander seeds, cumin seeds, black pepper, cloves, green cardamom, and cinnamon stick, dry roast them with salt let it cool down, and then grind it into a powder keep it aside.


For Gravy ➣

1. Take a large pot heat 2 tablespoons ghee and 4-5 tablespoons oil.

2. Now that add 1 black cardamom, 4-5 black pepper, 2- 3 cloves, 1 bay leave, 1-inch cinnamon, stir everything well.

3. Then add onions and saute till they change to a golden brown. Make the onion brown otherwise, the gravy will not taste and look delicious.

4. Once the onion is changed properly to golden brown add the marinated chicken and mix it, add salt to taste mix it. Fry chicken till it releases moisture on low flame.

5. Now pour some water and add the prepared masala 1 tablespoon mix well.

6. Now cover the lid and cook for 5-6 whistles till the mutton became soft. If you have marinated in a refrigerator before so it will take less time to become soft.

7. In a pan add ghee and prepared masala mix it well add this in mutton and mix it (optional).

8. Once the mutton became soft garnish it with coriander leaves the hot mutton curry is ready to serve with roti, rice, or paratha.
